Madras curry is a fairly new British-Indian spice mix that can be used universally. Pfeffersack & Söhne’s own creation is based on the classic blend with a slightly more European interpretation.
The Madras curry is refreshingly mild and aromatic combined with a pleasant mustardy spiciness. Whether spicy, hot or fruity: this balanced blend is designed for all tastes. The curry owes its freshness to the coriander seeds and cardamom, which add a light citrus note. It tastes great with poultry, fish and vegetables, but our Madras curry also enhances hearty curry sausages.
Fun fact: Madras curry is almost unknown in India – it was Indian restaurants in Great Britain that first created this mixture. In India, it was once a province whose capital was also called Madras. The city has been called Chennai since 1996, was built around the British Fort St. George in 1640 and today has more than 6.5 million inhabitants.
Ingredients: Coriander seed, cumin, turmeric, ginger, black Malabar pepper, yellow mustard seed, cardamom, chili, cloves, cinnamon blossom, bay leaf.
